Hosting a Progressive Dinner

This October we hosted a Progressive Dinner. Our entree was salad. I haven't participated in a progressive dinner before, and I would totally do it again. It was extremely easy, preparation was quick, clean up was simple and it was fun welcoming people into our home.



Ingredients:
1/2 cup pomegranate seeds
1 Pear
Mixed baby greens
1/2 cup crumbled Gorgonzola cheese
Berry Balsamic Vinaigrette
1/4 cup roasted, candied pecans

Berry Balsamic Vinaigrette:
2 Tablespoons Dijon mustard
1/3 cup balsamic vinegar
1 1/2 Tablespoon raspberry preserves
1/2 teaspoon sale
1/2 teaspoon black pepper
3/4 cup EVOO
sugar to taste
Mix together and shake well.

Candied Pecans:
1/4 cup chopped pecans
1/2 cup white sugar

Heat sugar in skillet over medium heat. After sugar starts to melt add pecans, toss and quickly remove from heat onto parchment paper.
